Smoked Turkey

There’s nothing quite like a smoked turkey and injecting it makes it even better. This turkey is moist and bursting with great flavor.

13 -15 lb Turkey
3 – 4 TBSP Arizona Original Rub

Injection Marinade
3 C Chicken broth
1 Stick Butter (unsalted)
1½ TSP Dried Thyme
1½ TSP Dried Marjoram
2 TSP Arizona Original Rub
1 TSP Arizona Chipotle Rub

 If frozen, thaw turkey according to directions. Rinse well and pat dry. Thoroughly season turkey inside and out with Arizona Rub. In medium saucepan, heat chicken broth and butter until melted. Add dried thyme, marjoram and Arizona Rub. Mix well. Continue to simmer over low heat for 10 minutes. Strain one cup of marinade to remove herbs (they can clog needle). Using a marinade injector, inject into turkey inserting needle about every inch. Place turkey on a grate in a baking dish/pan. Add remaining marinade to pan. Smoke at 230° until internal temperature—measured in several places—reaches 165° (about 30 to 40 minutes per pound). Remove from smoker, cover with foil and let rest for 20 to 30 minutes. Carve and serve. Use pan drippings for gravy.
